Ina created her blog "Big Apple Curry" two years ago and it has been going strong ever since.  Her passion for Indian cuisine stems from her family heritage and her genuine interest in sharing her recipes with a broader audience.

Big Apple Curry shares her attempts to teach Indian Cooking to her husband Sean in their small Harlem kitchen. Her blog tries to help explain the basics of an ancient cuisine; full of history, spices, herbs, heat, and healing properties. And doing so in a modern world where everyone is conscious of what they eat and where it comes from, whilst trying to be healthy, nourished, and satisfied at the same time.

Ina is married and has one son.  She lives and works in New York City.

In order to know a bit more about Ina, I have devised a few questions loosely based on the Proust Questionnaire.

 

What is your favourite food?

This is challenge because I enjoy so many cuisines! I would have to say my favourite meal is what I call my "homemade Indian spread" that combines to create the perfect bite: pan-fried crunch okra, roasted eggplant, coconut corn basmati rice, tandoori chicken, mattar paneer, and lamb kebabs. It sounds like a lot of stuff, but the balance of flavors is perfect, and no one dish is the star, it's a real medley. I love thoughtfully prepared, well-seasoned dishes and as many fresh vegetables as possible alongside flavorful, tender meat dishes.  

What is your best health tip?

Water + sleep + meditation = good health. 

What healthy snacks do you rely on to keep you going?

Nuts. I usually carry a nut bar in my purse, which is a saving grace when I'm on-the-go in New York City. I sometimes pair nuts with fruit or cheese. I love a green apple with some almond butter. 

Where do you like to eat?

I live in New York City and enjoy eating in Harlem, where the food scene is exploding. I like being surprised, like the fusion between African, Asian, and African-American cuisines with dishes like AFRO / ASIAN / AMERICAN OXTAIL DUMPLINGS with Green Apple Curry Sauce, Taro Root" and BARBEQUE BRISKET EGG ROLL with Grits, Cabbage, Pomegranate Barbeque Sauce" -- several cuisines colliding!

What three staple foods are always in your fridge?

Walnuts, baby spinach, eggs.

And now a bit about you…

What do you consider your greatest achievement?

My family.

What trait do you most value in your friends and most deplore in others?

I most value genuineness and compassion.  I deplore insincerity and dishonesty.

What is your idea of perfect happiness?

My idea of perfect happiness is identifying something you're passionate about, which really lights you on fire in your soul, and doing it. For me it's singing. 

Which living person do you most admire?

Refugees. They fight to stay alive and live another day despite losing their homelands and identities.

What is your most treasured possession?

My son.

What is the natural talent you would like to be gifted with?

The ability to play professional basketball!!!

Name three indispensable things that you would take with you on a desert island.

A Swiss Army knife, a waterproof tent, and Mozart.

What was the best piece of advice you have ever been given?

"Excellence does not equal perfection.
